Ann’s Chicken Salad Recipe

If you have attended any of our parties you have probably had one of our yummy chicken sandwiches. These are easy to make, healthy and are always a crowd pleaser.
2 cups chopped chicken (I use rotisserie)
1/4 – 1/3 cup of mayonnaise
1 teaspoon green onion or shallot finely chopped
Fresh squeezed lime juice to taste (usually one lime)
1 avocado cubed
Parsley or cilantro to taste
1/8 teaspoon red pepper
Salt and pepper to taste
Combine all ingredients in a bowl and spread on pita bread. Cut sandwiches into wedges.Healthy-Avocado-Chicken-Salad-Recipe-1
